Tip – if you end up with some unequal cups, carefully spoon some egg mixture from the cups with too much egg to cups with too little until they are evened out.

Step 5 | Sprinkle with bacon and cheese

Sprinkle with the reserved 1/4 cup bacon and 1/4 cup shredded cheese.

Step 6 | Bake for 18-20 minutes

Bake at 350°F for 18-20 minutes. Check the egg bites at 18 minutes – if the middle is cooked they are done (you can check by inserting a toothpick – if it comes out clean they are done). If not, continue to cook in 2-minute increments until done, but be careful to not overcook.

Note: the eggs will puff up during cooking and deflate slightly after you remove them from the oven.
